Sticking with a little bit of a tea theme this week, I’ve got a crazy amount of tea at home and need to make some room in the pantry…plus I’ve been having way too many bubble teas from stores. Seriously, it’s become an addiction. So in order to have it on demand and control the level of sugar etc, going into it, I decided to give making it at home a go. You can get the pearls from any Asian grocer – we found ours at the Miracle Supermarket in Marrickville Metro for on a couple of dollars!
I would like to point out that I always ask for less sugar at the counter, so this recipe may not be sweet enough for some of you!
What You’ll Need
Makes 2 cups Takes 20 – 30mins
- 2 x teabags of your favourite earl grey tea (or the equivalent in loose leaf form)
- boiling water
- stove top & small sauce pan
- tapioca balls/pearls (aka bubbles or boba)
- lots of ice cubes
- cocktail shaker (optional)
- 2 x glasses
- 2 x wide straws to drink from!
1. Start by brewing your tea – we just used our coffee plunger, sans plunger because they’re heat proof. Let it steep for about 3 minutes (or whatever your tea brand recommends) remove bags, and leave to cool off a little. If you want to sweeten your tea, add your sugar or honey now. I added 2 teaspoons of honey and stirred it through. 2. Prepare the tapioca pearls. Check the back of the bag for these as the instructions do vary – we had the 5 minute kind so you simply boil 2 cups of water, pop in 1/4 cup of tapioca pearls, stir them gently until they float. Turn the heat to medium, leaving them for 2-3 minutes with the lid on. Remove lid, turn off heat for another 2-3 minutes or until you are happy with the softness. Strain out and pop them in a bowl of cold water for 20 seconds then into the bottom of your cups! 3. If you were super smart and prepared, you might have made your tea the night before. I’m not that organised so we chilled the tea by stirring in some ice until it was nice and cold – if you have a cocktail shaker, you could shake it up! You can strain off the melted ice when you pour it into the glass. 4. Pop a few fresh cubes of ice in the glass on top of your pearls. Pour in the tea and the milk – we did about 60/40 ratio tea to milk. If you want a sweeter flavour you can use condensed milk instead. I think next time I make this I might try it with coconut milk instead! 5. Drop a wide straw in your glass and drink your very own homemade earl grey bubble tea!
